Ingredients:
1/2 pound pork sausage
1 medium onion, chopped
4 cups (16 ounces) frozen diced hash brown potatoes, thawed
1 1/2 cups shredded Monterey Jack or Cheddar cheese
3 eggs, beaten
1 cup milk
1/4 teaspoon pepper
Instructions:
Preheat oven to 350 degrees. Spray a square casserole dish with cooking spray on the bottom and up the sides. Cook sausage and onion in a large skillet over medium heat until sausage is no longer pick and onion is slightly tender. Drain. Place potatoes in the bottom of the casserole dish. Sprinkle 1/2 of the cheese over the top of the potatoes. Layer in all of the sausage mixture. Cover the top with the rest of the cheese. In large bowl mix together the eggs, milk and pepper. Pour over the top of the casserole. Bake 50 minutes or until knife comes out clean when inserted in the middle. Let stand 10 minutes before serving. This can be put together the night before and left in the refrigerator just let the casserole come to room temperature about 15 minutes before cooking.

Ingredients:
3 tablespoons butter
1/4 cup chopped green onion
2 teaspoons parsley
2 tablespoons flour
1 cup milk
1/2 cup heavy cream
1 1/2 cups diced ham
1 1/2 cups frozen peas, cooked and drained
1/8 teaspoon black pepper
Salt to taste
Instruction:
In a large saucepan over low heat melt butter. Place green onions in pan and cook for 2 minutes or until slightly tender. Gradually add flour and stir until flour is smooth and starting to bubble. Slowly add milk and stir well. Add heavy cream and continue to stir until all ingredients are mixed together well. Add ham and cooked peas. Make sure the ham and peas are covered well with the sauce. Sprinkle with pepper. Remember the ham can be slightly salty so add a little salt until just it’s just the right amount for your taste. Serve over toast.

Ingredients:
2 cans (8 ounces each) crushed pineapple in juice
1/2 teaspoon salt
1/2 cup sugar
3 tablespoons flour
3 eggs, beaten
2 cups fresh bread cubes
6 tablespoons melted butter
Instructions:
Preheat oven to 350 degrees. Spray a 2 quart casserole dish well with cooking spray. Place pineapple, juice and all, into a large mixing bowl. Sir in salt, sugar and flour. Slowly add eggs and stir until all ingredients are mixed together well. Place bread cubes in a separate bowl. Add melted butter and toss to cover well. Gently stir into pineapple mixture. Pour pineapple mixture into the prepared casserole dish. Bake 45 minutes. Serve warm. Yummy!
