Luck of the Irish Potato Stew

Ingredients:

2 pounds lamb cut into chunks
2 pounds white potatoes cut into 1/2 inch chunks
2 onions, chopped
3 to 4 cups water
Parsley
Salt and pepper to taste

Instructions:

Layer half of the potatoes in the bottom of a Dutch oven.  Next add half of the onions.  Place all the lamb on top of the potatoes and onions.  Place the other half of the onions on top of the lamb and finish with the other half of the potatoes.  Sprinkle with salt and pepper to taste.  Add a small amount of parsley to the top. Add enough water about 3 to 4 cups to come 2/3 of the way up the pan.  Place pan over high heat and bring to a rapid boil.  Once boiling place heat on low temperature and cover pan.  Cook approximately 2 hours or until potatoes are fork tender.  Stew should become slightly thick.  Water can be added during cooking if stew become to thick for your liking.

Edible Flower Garden

Ingredients:

1 white sheet cake, baked
2 1/2 to 3 cups white icing 
2 white cupcakes, baked
5 white mini cupcakes, baked 
1/4 cup green icing 
Green gel icing
Spearmint leaves 
Colored sugars
LifeSavers Gummies
Sour rings
Colored mini chocolate chips
Any other types of decorations as you like

Instructions:

Frost the sheet cake with the white icing. Take a resealable plastic bag and fill with green frosting.  Cut out one corner of the bag and pipe the icing across the bottom of the cake for the grass.  Split the large cupcakes in half horizontally and place each cupcake piece smooth side up onto the top of the cake.  Frost cupcakes completely with the white icing.  Place the mini cupcakes on the cake and frost with the white icing also.  Use the green decorators gel to make stems for your flowers.  Add spearmint leaves along the stems for leaves.  Decorate the cupcakes with the decorations suggested or any other type of decorations you would like to make your flowers.

Easter Morning Casserole

Ingredients:

1/2 pound pork sausage
1 medium onion, chopped
4 cups (16 ounces) frozen diced hash brown potatoes, thawed
1 1/2 cups shredded Monterey Jack or Cheddar cheese
3 eggs, beaten
1 cup milk
1/4 teaspoon pepper

Instructions:

Preheat oven to 350 degrees.  Spray a square casserole dish with cooking spray on the bottom and up the sides. Cook sausage and onion in a large skillet over medium heat until sausage is no longer pick and onion is slightly tender.  Drain.  Place potatoes in the bottom of the casserole dish.  Sprinkle 1/2 of the cheese over the top of the potatoes.  Layer in all of the sausage mixture.  Cover the top with the rest of the cheese.  In large bowl mix together the eggs, milk and pepper.  Pour over the top of the casserole.  Bake 50 minutes or until knife comes out clean when inserted in the middle.  Let stand 10 minutes before serving.  This can be put together the night before and left in the refrigerator just let the casserole come to room temperature about 15 minutes before cooking.

Creamed Easter Ham Over Toast

Ingredients:

3 tablespoons butter
1/4 cup chopped green onion
2 teaspoons parsley
2 tablespoons flour
1 cup milk
1/2 cup heavy cream
1 1/2  cups diced ham
1 1/2 cups frozen peas, cooked and drained
1/8 teaspoon black pepper
Salt to taste
Instruction:

In a large saucepan over low heat melt butter.  Place green onions in pan and cook for 2 minutes or until slightly tender.  Gradually add flour and stir until flour is smooth and starting to bubble.  Slowly add milk and stir well.  Add heavy cream and continue to stir until all ingredients are mixed together well.  Add ham and cooked peas.  Make sure the ham and peas are covered well with the sauce.  Sprinkle with pepper.  Remember the ham can be slightly salty so add a little salt until just it’s just the right amount for your taste.  Serve over toast.

Yummy Baked Pineapple

Ingredients:

2 cans (8 ounces each) crushed pineapple in juice
1/2 teaspoon salt
1/2 cup sugar
3 tablespoons flour
3 eggs, beaten
2 cups fresh bread cubes
6 tablespoons melted butter

Instructions:
Preheat oven to 350 degrees.  Spray a 2 quart casserole dish well with cooking spray.  Place pineapple, juice and all, into a large mixing bowl.  Sir in salt, sugar and flour.  Slowly add eggs and stir until all ingredients are mixed together well.  Place bread cubes in a separate bowl.  Add melted butter and toss to cover well.  Gently stir into pineapple mixture.  Pour pineapple mixture into the prepared casserole dish.  Bake 45 minutes. Serve warm.  Yummy!
